For many of my screenshots I use custom poses.
It’s fairly easy and you can find a great tutorial on the Sims Community.
I also use TwistedMexi’s Tool mod, to move posed sims. This is very helpful, when you want to adjust the position of the sim you’ve already posed or to pose sims (especially couple/group poses) off the lot. You just need to pose your sims on the nearest lot and move them with Tool to where you want them. Remember to change Tool settings to snap to terrain, otherwise your sim may end up buiried in the ground or floating above it.
